Rinse the Black Beans.
Combine Scallions, Parsley, Shallots, and Hot Pepper to form a paste .
Heat the oil in a pot and add seasoning paste, beans, and scallions.
Add water, cubbed ham or few strips of bacon, parsley, and bring to boiling.
Cover and simmer for 2 hrs. or until beans are tender.
Process beans and juice in a food processor, or blender.
Force through a strainer.
Return sauce to low heat and season to taste.
